Beautiful Afternoon All...hope everyone had a great day! Busy finishing up the Venzun. Went to the meat market and picked up some fresh beef fat and pork trimmings. The beef fat is added to the burger to make it fry perfect. The pork trimmings are for the italian sausage that we will be making. I've done the stuffing many times...gonna keep it simple and just bulk the sausage and freeze in lb packages. Then patty and serve on ho-made buns.

Italian Venzun Sausage

4# Venzun ground
1# ground pork trimmings
4 minced cloves of garlic
1 tsp tyme
1 tsp cayenne pepper
1 Tsp parsley flakes
1 Tsp fennel seeds
1 tsp black pepper
1 Tsp salt

Mix well and enjoy....try a little burger sample and add more of what you prefer....I like black and red pepper and fennel and garlic...

Looks like I am the first to report in from the Southern Bash... I had a GREAT time and it was WONDERFUL to meet some folks and be able to put names to faces, although the way I am with names I may put them with the wrong faces!

Well I got home not too long ago, It was very nice to see soo many people that I know online...
I got there late as I was up to my elbows in a treadmill.
I think I surprised people by kicking my car door closed with a vengance. There was no sign for Korth Park from the Jefferson/Ft. Atkinson direction so I passed it and had to turn around.
And I got my finger squished by the treadmill, so typing hurts, and I have to go make up the italian beef that Cind brought to sell!! YUM!

I played thawed freeze pack /bean bag "snow ball" fight with H&R's kids.. She won't let me babysit them... gee I dunno why.. they seem to like me...
and technically I am an adult... LOL

H&R, no, the ride was "uneventful", fortunately. He pretty much just laid down the entire trip. What a good boy. Once we got home was another story. He wanted out, and my sis was there in no time to get him, to DH's dismay. She was so excited. I hope he gets used to his new home in no time. I will have to post pics as I get them. Thank you again!
It was a great time seeing everyone & the food was awesome. We must do it again! And yes, we missed you greatly, FT. We kept watching for a truck to drive by with feathers flying out the windows.

Glad to hear everyone is home OK...CC, her DH, my DH and I stayed talking for a bit at the park. Our kids showed up so we swapped vehicles and they went to the hockey game and we went home and then took all the dogs to the dog park. Home now and chores are done! Yeah, early for me.
Had a great time at the "mini-bash." FT couldnt come out...something with her furnace in her duplex--her bro was coming over to fix it. THis thru a phone call to Cind. Thanks everyone for being so concerned with what I could and couldnt eat! That was really sweet of you all to be concerned...we had a great WHite Elephant exchange...although I think there was more exchanging going on after the game was finished! It is funny what is a White E to some is in demand with others!
We were teasing Jim when a guy came up the road driving a tractor...I said "here comes Jim!"

Thanks for the venison sausage recipe BigZ! I tasted some at the processors and it was very good so I am going to have him make it for me. (I wanted slicing summer) He had a stick that I tried with beef and garlic and onion. At @ $2.49/lb it better be good! Oh well, it will be nice to have on hand...

Nice pics of everyone Deb (Kathy) except me of course...I cant believe that I have my Mom's double chin!!! Maybe everyone thinks that they dont look like their pics...I know I certainly do!
Well I think I am going to try some of my pumpkin pie liqueur on some ice cream...people on another site that I frequent say it is to die for!
