Would love to hear your thoughts on his breed?

If your boy (the one you posted about) is a true olive egger, then breeding him to a dark brown layer will give you 50 percent that lay a dark brown egg and 50 percent that lay a darker green egg. The exact shade will depend on the shade of brown the brown egg layer is.
I just crossed a silkie (tan egg layer) with an olive egger and have two pullet chicks from that cross. I expect they will either lay a darker brown than the silkie or a lighter green than the olive egger, if that makes sense! 😂

If your rooster from the blue egg has blue egg parent on both sides, then if you breed him to a brown egg layer, you will get chickens that lay green eggs, again shade depends on the shade of brown the parent chicken lays.
There are others that can go into more detail about egg color genetics than I can on this forum. 😊
