1 (16-oz.) jar orange marmalade
1 (8-oz.) jar horseradish sauce
2 (8-oz.) pkgs. cream cheese
1/2 level tsp. fresh nutmeg
Mix nutmeg into room temp cream cheese and spread on shallow serving plate. Mix horseradish with marmalade and spread over cream cheese. Serve with crackers.
We live in the middle of 82 acres in southern Missouri. Property has been in dh's family since 1920. Here is our run during the winter months. Most days the chickens free range . The pop door locks up at night and my two little goats stay in the run, in the red box during the nights. We unroll a large round bale of hay inside the run every winter. Keeps them off the muddy, icy ground. It also is several inches thick so the ground does not freeze, thus...bugs and worms are under the hay. Plus since we use hay there are still lots of seeds to scratch for. Dh added on to the back of the chicken house/coop with a turkey pen. He has one roost about 5 ft off the ground and the top one about 8-9 ft. off the ground. They love it!! He closed off the pop door seen in the lower left pic and made it come out of the run side of the house...the right of bottom pic. So they are separate from the chickens. Sometimes my six guineas like to sleep in the turkey pen, too. Turkeys free range during the daylight hours.
8 med. sized potatoes
1 large onion
nutmeg (for taste)
1/4 stick butter
1/2 cup of beef broth
slice potatoes and onion and layer in microwave casserole dish. Sprinkle fresh nutmeg ( I grate about 1/4 of a nutmeg), salt, pepper and dot with butter. Pour the broth over the entire casserole. Cover tightly with plastic wrap and then pull back one corner of wrap to vent.

3 (8-oz.) cans crab meat
2-3 level tbsp lemon juice
1 (10-oz.) jar cocktail sauce
Soften cream cheese to room temp. Mix lemon juice into the cream cheese until spreadable. Spread cream cheese onto a shallow serving plate. Top cream cheese with cocktail sauce. Now flake the crabmeat all over the cocktail sauce. Serve with crackers for dipping.
1 (16-oz.) pkg. sliced ham
1 (8-oz.) pkg. cream cheese
2 (16-oz.) jars dill pickle spears
1 (8-oz.) jar pimento
Spread room temperature cream cheese all over a slice of ham. Lay a dill pickle spear and a piece of pimento on top and roll up the slice of ham jellyroll style. Secure with toothpicks if necessary. Repeat until all ham slices have been used. Chill for thirty minutes and then cut ham rolls into one inch slices and serve.
6 hard boiled eggs, chopped
2 tbsp pickle relish
1/4 tsp. prepared yellow mustard
2 - 4 tbsp mayonnaise
salt and pepper to taste
Mix ingredients. Be spare with the yellow mustard. Too much can be overwhelming. Use mayonnaise beginning with 2 tbsp and only adding more if your egg mixture is too dry. Use as sandwich filling, serve with crackers and fruit or serve on a bed of lettuce.
1 can whole kernel corn
3 chopped green onions
2 tbsp white vinegar
1/2 cup mayo
1/4 cup chopped celery
3 tbsp sugar
dash parsley flakes
6 lg. sliced radishes
Drain corn well and add remaining ingredients. Sprinkle parsley over the salad and refrigerate if not served immediately.
Note: This was my children's grandmother's recipe that she brought to every family function. She has passed now but her recipe lives on.
4 med. green tomatoes
2-3 pkgs. salted soda crackers
1/4 cup canola oil
slice tomatoes into 1/4 inch slices or so. Beat eggs in a separate bowl. Crush two packages of crackers in a zip lock bag and pour cracker crumbs into a separate bowl. heat canola oil in a skillet till hot but not smoking. dip tomato slices in egg wash and then into cracker crumbs and fry till golden brown. Salt and pepper and drain on paper towels. This could be addictive!
1 (16-oz.) pkg. ground beef
1 med. onion
4 med. potatoes
1 tsp. salt
1/2 tsp. pepper
1 can cream of mushroom soup
1/2 cup milk
Fry, drain and set aside the ground beef. Dice the potatoes (skins left on is fine)and fry in the same skillet with the onion diced up till soft and brown. Season as you go. Add the meat back into the skillet with the potatoes and onions. Stir in soup and milk. More milk can be added if too dry. Just heat the soup through and serve!

1 can chocolate frosting
1/2 gal. chocolate chip mint ice cream
Prepare cake mix per instructions on box and let completely cool. While cake is cooling let ice cream set at room temperature. Slice cake layers across, making 4 layers. (16-oz.) tub of Cool Whip
(8-oz.) carton of sour cream
(3-oz.) pkgs. instant cheesecake
3 c. sliced fresh strawberries
1/2 c. sugar
2 tbsp Amaretto liquor or almond

While heating your skillet, tear a large hole in the middle of your slice of bread. when skillet is hot, spray with Pam. Lay the bread in the skillet and drop an egg into the middle of the hole. Cook gently until bread is golden brown on bottom then flip the bread to continue cooking on the other side. Season to taste. You may have to spray the pan again before flipping. Fast easy breakfast.
