Had my daughter get some pictures tonight while processing some quail. They could be better, but I tried to show how I remove the backbone and open them up.
Skinned and ready to open up.

Cut along both sides
Remove back
Now I try to pop it open by breaking the wishbone area.
Then just pull and wipe everything out.
All done!
Takes maybe 5 minutes per bird. I like to fry these in butter for breakfast

60 egg assortment was at 24 with an hour to go and so I got it at 26.....i can’t be too mad because that was a “steal” as usually includes colors from both standard and rare collections!!
