They're so much more delicate than other poultry that it's really not necessary at all to scald unless you wait too long and let them cool down. I just try to speed-pluck and get the big guys out while they're still warm.
we do it same time as chickens so already have the water ready. hubby doesn’t cut with quail just pulls head off then dips in the water for a few seconds and hands off to me to start plucking. then he makes the cuts for cleaning and packaging.

He PULLS the heads off?! Wow! You might skin half the bird by accident.
