When we talk Jumbo birds, we are talking 3 ounces live weight and maybe 2 ounces carcass weights.

Normal coturnix quail weigh in at 9 ounces. To be considered jumbo they must weigh 12 ounces at 10 weeks old. Most butcher at 8 weeks and 10-11 ounce live weight birds. Like all livestock, that 12 ounces at 10 weeks is a combination of genetics, feed, care and husbandry. Any larger and they are like the CXs and outgrow their bones.

Carcass weights are 6-8 ounces skinned. I have eaten 2 for dinner with sides. Better to focus on vegetables and only eat one for my diet.

For all the emphasis on jumbos, keep in mind we are talking a couple of ounces. Then if you only breast them out, figure 4 ounces of meat finished product.

I try to respect the whole animal and eat all the meat. The bones/remains go to the chickens if not frozen for broth and then the chickens. I'd do better plucking and should move in that direction and make full use of the flavorful skin.

And I get that...the mere few ounce difference. I've been reading up on quail for a while and am wanting to understand the differences among the different quail better than I do.

We do respect any meat animal here and I utilize as much of a bird, turkey, or other that I absolutely can.
 
Pardon my late and ignorant question, I haven't been following the thread-
So the regular on the left is just a plain coturnix and the one on the right is a jumbo...for someone brand new to quail (almost there) .... when you say jumbo...is that the Jumbo Brown quail?
Where did you get your jumbo quail/original quail stock from?

I'm thinking of adding quail to the mix because I am feeding a bottomless pit of a kid...

Myshire is enlarging the jumbos. They come in different colors. Same coturnix, different color.
Texas A&M are the white, large ones
Wild types are called jumbo (myshire) and meat makers (JMF) and several others.
Myshire is also breeding up a couple other colors to make jumbo weights.
Jumbo isn't associated with color.

Where did you get your jumbo quail/original quail stock from?
Muddy, Kiki and I got most (not all) of ours from Myshire.
Kansas City Quail Farm and JMF are a couple other notable breeders and sellers of eggs.
Then there is craigslist and the local feed store quail that you can inquire as to sources.

I'm getting two eggs a day out of my buttons now. The two light coloured ones are the hens. Not that you can see more than a blur of one of them.

as nutty said....jumbo refers to any line that breeds 99% true for both color and weight. 12-16 oz at 10 weeks. I use myshire farm for all of my stock. Zack now offers jumbo wild, white, egyptian, and white wing colors and is offering an assorted order this year as well. both birds pictured were wild type color but the smaller one did not make weight to be considered jumbo.
I would recommend wild or egyptian for newbie as both colors are easily feather-sexable and probably largest of the jumbos.

@Nabiki and @Kiki I just noticed how high your hatch rates are. Amazing -- and the Myshire shipped eggs have high rates too.

Are you starting a 2021 Google Sheet or just adding a 2021 tab to the current one?

i finally opened the remaining 5 eggs. they were all mid-late quitters with none making it to pip 😭😭 the 18 are crazy quailies and seem to be doing well. i need to pull out the top layer of towels as they have made a mess!!!
