boy I am jealous,I live in a area that have a lot of farms and Mennonites you think they would of grown up on farm eggs ha people here rather eat MC Donald's . I love duck eggs I eat them and sell my chicken eggs. People here wont eat fertile eggs. here I am from long island now I live in KY and I eat more country food then they do. lol and good luck in selling your eggs.
 
I'm actually selling my duck eggs for $6 a dozen! But that's here in the big city with Yuppies with plenty of disposable income eager to try this new locally-sourced cage-free delicacy. To WannaBeHillBilly, I had 2 opportunities that worked for me: 1) A neighborhood yard sale where I set up a table. Just that one day and I had several folks inquiring about getting duck eggs in the future resulting in two regular standing orders. 2) I did a bunch of peddling with local cafes that serve brunch. A lot of rejections, but did end up with one that ended up featuring my duck eggs as a option for their omelettes (at an additional $3.00!). Just be up on your state laws (I had to get licensed by the Illinois Dept. of Agriculture if I wanted to sell the eggs off the property).
I just live 20 minutes away from the "big" city (Charleston), but you would never guess that because it is absolutely rural here. - So i just need to find the Yuppies in big C of WV! - There are in fact some specialty bakeries/cafes, advertising gluten/HFCS/MSG/GMO free products, need to talk to these people.
Good point with the state laws! I know i can sell up to 1800 eggs/week without a permit, but i don't know if that includes selling to other businesses…

I remember when i was in Romania for the first time and our friends wanted to go out to a fancy restaurant, the coolest place in town, every cool kid will be there - McDonalds…
And i have to admit, when the first McDonalds opened in my area in Germany back in the 80's it was cool to wrap mom's school-sandwich with a McDonalds plastic bag…
And yes, people asked me if i could ensure that my duck-eggs weren't fertilized. Bein asked that question for the tenth time my answer was that it is really difficult for the drakes to pull their "raincoats" over without having hands…

Balut! - I could sell Balut here to the Asian grocery store, but i won't! I read the story of the »Baluties« from @Texas Kiki … No money in the world will make me do this!
This is my personal opinion and my decision and i have the right not to engage into a business that i don't like to do. It neither means that i disrespect valued traditions nor the peoples who practice those. There are parts of this world, where people gorge on large spiders, but this does not mean that i have to start a tarantula farm now, does it?
And be assured: One time-use e-mail addresses can be tracked to their origin as well as attacks to my network…
 
Duck eggs are creamier but most don’t care for the color of eggs. Alot have a greyish hue to them or the crazy ducks like to roll in mud and hard to get that all off. Balut is a Vietnamese delicacy. Some Filipino as well. One duck egg is two chicken eggs. I use them in recipes as well. Nice dark orange, thick yolks. Geese are the same way. With them you can make a 12 egg poundcake with 4 eggs. Both are delicious! Don’t fret.

Oh wow! I just thought of a great idea for you! Change your sign to mini pound cakes for sale. Use duck eggs and now you have sold them!

I love scramble duck eggs! Due to my job i have to eat a lot of hotel-breakfasts and there the scrambled eggs are more like crumbly eggs, way over cooked. It is really hard to overcook duck eggs, even hard boiled duck eggs have creamy yolks.
I cannot talk much about goose eggs, it is too long ago since i had one. All i remember it was HUUUGE and the yolk was too small for me. But that was 40 years ago and my memory of that time is really blurry.
I don't have a problem with my ducks rolling their eggs through the mud, i keep them in the house until 9-9 am and by that time they have all laid their eggs into the shared nests. I still need to clean them though.
 
I tried to give away some duck eggs on Facebook. I only have one hen so I advertised that I had “a few” eggs to give away.
Some lady responds “I’ll take a dozen”
She obviously didn’t read my post, and was ignored.
I have a friend who still jokes about it all the time, “Did Ruby lay an egg today? great, I’ll take a dozen.”
