Any Home Bakers Here?

Oh heck yeah! I just need a reminder, and something to gauge things by.

ANZACS Cookies

(Australian New Zealand Army Cookies)

1 Stick butter

½ Cup Raw Sugar (or Light brown sugar

1/3 Cup Golden Syrup (dark corn syrup)

1 Cup flour

2 tsp. Baking powder

1 Cup rolled oats

1 Cup flaked coconut

½ Cup toasted sunflower seeds (any nut)

½ Cup raisins

¼ Cup chopped dried apricots

Cream butter, sugar & syrup. Combine flour, baking powder, oats, nuts, raisins coconut

and apricots; mix to coat with hands. Pour into wet ingredients in bowl; mix to blend.

Roll into tube & divide in two then divide into 18 cookies. Bake at 325 for 20 min


The traditional ones are a family favourite but I've never thought to add the last three ingredients. Will have to add to my shopping list! :)
 
Can I use whole wheat flour for the ANZACS cookies? I have some that I ground that needs to be used up before it goes rancid.
AND how important are the raisins? I hate anything with raisins cooked in; plain ole dried, wrinkly raisins are wonderful - just don't cook with them!
 
I'm talking basic biscuit, with a little patty of breakfast sausage and maybe some american, or cheddar cheese.
How about "Sausage-Cheese Balls" - it was a family tradition for Christmas that me and DH have carried on.

Basically a biscuit mix with raw sausage and shredded cheese, mixed up and baked. They are quite good. The recipes started with Bisquick, I have tried without the mix but have never done as well as their recipe.

X 2 - so yummy - just made a batch last weekend! Super simple and delicious.

You can cut the raisins!

I think whole wheat flour would be fine. These cookies last a long time. The Story is that they were intended for shipping to WW II soldiers by boat. They actually taste better after a week or so.

I would add more dried apricots because they are very tasty!
 
I have some dehydrated mango that I need to use up, so maybe that instead. I was concerned that the whole wheat flour would dry the cookies out too much or make them crumbly. Just have to whip up a batch and see!
 
Sunflour yours sound pretty much like my family bisquit favorite. Instead of sausage we do garlic powder/garlic salt with graded sharp cheddar cheese in the bisquick mix.

Dried apricots are one of my favorite snacks. Although DH seemed to find them less appealing after I told him they always remind me of monkey ears.

Traditional Anzac biscuits don't have them so you can leave them out I'm sure.

With the flour I would just check they aren't too dry and add more golden syrup if they are. I've made them with whole oats and they work but those ground quick oats make a drier mix that isn't quite the same so the whole grain could do the same thing?
