Any Home Bakers Here?

All of my family recipes that I got from my mom were for a family of 5 kids + 2 adults. The recipes from my dads mom were for 13 kids + 2 adults but my mom managed to cut them down by 1/2 to feed our family. Now I am trying to cut them even more or find good ways to store/use the leftovers.
Meatloaf is great for freezing - I make mini-meatloafs (6 to 7 ounces each) and freeze them individually for lunches. DH eats his as a meatloaf with potato chips as a side, I cut my leftover meatloaf in half and use for a sandwich on toasted bread for lunch - yum!.

My friend buys the "bread pan" aluminum trays and makes 4 lasagnas from her recipe - which would normally be a 9x13 pan. She bakes up one and freezes the other 3. Pull a pan out of the freezer and bake. 1 small pan gives 2 servings for supper and a leftover for lunch - so perfect sized for the 2 of them. That means her 2 hours of recipe making makes 4 suppers.
I tried making some freezer recipe dishes from a book.

Freezing messes up the flavor of a lot of things-- Cheese is one of them.
 
I buy 1 pound blocks of cheese when it is on sale and freeze it for future use. I never noticed a taste problem with the frozen cheese as long as it stayed vacuum sealed. Sometimes the texture is a little off (crumbly), but flavor always was acceptable. But, we go thru so much cheese that it never stays in the freezer for more than a couple of months.

I just put mini meatloafs in the freezer.

I patted some out flat to fit the bread as my husband likes meatloaf sandwichs.

Most meatloaf recipes are so different from person to person due to what they like.

I love my vacuum sealer.

I have been eating some steaks lately that were frozen in 2016.

They are just like I bought them last week.
