Could you educate us on what that is exactly? I'm not too versed in canaries. Is it something like a breed, or more of a variety? Has something to do with the way the males chirp/sing, perhaps?

I’d consider it a breed. There are three categories of domestic canary; color, type, and song canaries. There are different breeds and varieties within these categories. Harz Rollers are in the song category, being bred for a distinctive almost closed-beak song.
