Quail are actually rather easy to process

I assume any bird is like a chicken (smaller or larger), and any mammal is like a rabbit (smaller or larger). It's just a matter of how many individual creatures to dispatch, and how many little bones per pound of meat, that makes me consider small ones more bother.

Mine dress out to around 4-4.5 oz plus bone, so about a bird per person at meals

Though I bought quail for eggs AND meat, I haven't actually been able to eat them yet. If someone else would process them for me and they sat in the freezer for a few weeks I would.

I'm wondering what quail taste like? I assume it's be more similar to partridge than chicken?

I think it's a bit gamier? We only have 4, so we have to eat them a day when someone isn't at home since everyone else is staying so far

Because most people live in cultures that don't see them as food. If you liked in a different coy try that did, you'd have no qualms about it.

Plus they were domesticated for companions and chickens were domesticated for food
Chickens were actually domesticated primarily for cockfighting at first. Meat and eggs were sort of a bonus.

Squirrels are rodents, so would you eat rat too if available?
My wife tried that one on me too. Like I said earlier, never say never. We’re talking survival scenario here, not I see a rat and my mouth starts watering. I hope none of us ever have to make these decisions but you just never know what lies ahead.

I probably would, unless I had reason to think someone had been putting out poison.

I cannot think of any reason for me to prefer squirrel vs. rat vs. guinea pig vs. pigeon vs. quail, at least until I try them and find out what flavor each one has. They are all small enough to be a bit inconvenient to butcher, and I've never actually tried any of them, but I'll happily try them all if it becomes convenient for me.
Guinea pigs are a favorite treat in Peru.. my former hubby told me. It's called cuy.
