My peanutbutter balls were usually made by my kids, after I ixed it up.
Peanutbutter Balls
1 1/4C. graham cracker crumbs
1C. pwd. sugar
1C. creamy p.b.
1/4C.soft butter
1/2C. chopped nuts
1/2C. flaked coconut
Mix all together, shape into balls. Makes about 3 Doz. I think this year I may try dipping them in choc. all or halfway, what do you all think? Would that be good, or too messy to eat?
These kids can help with also, if kids are old enough to use the stove, they can do it all.
Caramel Heavenlies
12 graham crakers
2C. mini-marshmallows
3/4C. butter
3/4C. br. sugar
1t.cinn.
1t.vanilla
1C. sliced almonds
1C. flaked coconut
Line 15"X1" baking pan with foil. Lay graham crackers in pan; cover with mallows. In saucepan over med. heat, cook and stir butter, br. sugar and cinn. until butter is melted and sugar dissolved. Remove from heat; stir in vanilla. Spoon over mallows. Sprinkle with almond and coconut. Bake 350* for 14-16 min or until browned. Cool completely. Cut into 2" sqs., then cut each sq. in half to form triangles. Makes about 6 Doz.
I like recipes for Christmas that are easy, quick and good! I have a few that take more time and love during this hectic time of year, so it makes them more special. I make dipped brownies(sometimes) they take a LONG time and are a PITA sometimes, but are more appreciated because of it.
Oven Caramel Corn
15C. Popped corn
1C. br. sugar
1/2C.butter
1/4C.lt. corn syrup
1/2t.salt
1/2t.soda
Heat oven to 200*. Divide popcorn between 2 ungreased baking pans, 13x9x2". In saucepan heat sugar, butter, corn syrup and salt, stir occasionally, until bubbly around edges. Continue cooking over med. heat 5 min.
Remove from heat; stir in soda until foamy. Pour on popped corn, stirring until corn is well coated. Bake 1 hr., stirring every 15min. About 15C.

Basket of fruit
1- 3oz. pkg. cream cheese, soft
3-31/2C. pwd. sugar
3 drops almond extract
red and yellow food coloring
MIx cr. cheese and sugar in bowluntil well blended. Stir in almond. Divide into thirds. Color one part pink, one part yellow. Mix yellow and red coloring to make the third part orange. Shape into strawberries, bananas and oranges. Roll oranges and strawberries on smallest holes of grater for texture. Refrigerate. Makes about a pound.
