It's not the mouth you have to worry about. It's the feet. Years ago someone I worked with tried keeping them. He got kicked one day while putting out feed. It ripped open his abdominal cavity and he spent weeks in the hospital.

I think the biggest problem with ratites is that folks got convinced they were the next big money making thing, so you get tons of people with no experience handling these animals getting lots of them and getting hurt.
