The inside is supposed to look like meat and bones. And some fat. Nothing more. Up in the ribcage area are the lungs, you will need to scrape those out. Testes are like white beans by the backbone, clean those out. I remove the adrenal glands along the spine right by the pelvis, they are pebbly looking things that are dark red. Anything that doesn't look striated like muscle comes out. Crop, trachea, esophagus...be careful not to spill the crop contents into the carcass. Rinse well in cold water and drain thoroughly. Are you plucking or did you skin it?
I've only processed twice, and the trachea is my problem area. Is there a trick to getting it out easily?
