Here is another idea for adding and removing water.

I really like SunnyChic's idea of coloring the water channels! They are next to impossible to tell how much water is in them, without taking the lid off for a closer look.

I have a still air model Hovabator and I quickly realized I should have no water in the incubator, as it pushed the humidity too high. I live near a lake and turns out there is lots of humidity in the air at the moment. The instructions did say if you live near the ocean, a lake, or a river valley you may not need water in it for the first 18 days.
I went to a pet store and bought an inexpensive hygromometer which measures humidity and my humidity levels were in the 50s% with no water in the incubator at all.
Think of what the climate would be like under a mother hen and compare your incubator climate to that.
