I've been running warm/hot water over the eggs just before peeling and they've been peeling really easily. Not sure if that'll work for others - please someone else give it a try and let me know. thanks.
I use a teaspoon to peel my hardboiled eggs, after dunking them in cold water for a few minutes, and it works really well. Tap the shell with the teaspoon to crack it and then slide the teaspoon underneath the shell and around the egg, lifting the shell off as you go. It comes off really quickly almost in one piece. Even with fresh eggs you only lose a small amount of the white. I write the date on my eggs with a pencil, so if I want my peeled eggs to look fancy and not all ragged I boil older ones.
Fresh eggs are always harder to peel. I always put them in cold water and crack them all over immediately after they are done boiling. Then I peel them once they have cooled down. I have NEVER
had a problem peeling them since using this method.
Thanks for the advice....We love boiled eggs but I have found it impossible to get nice looking deviled eggs. I usually give up and make egg salad....which is good too. Thanks again!!
I'm planning on making deviled eggs with 18 banty eggs from my hens this Friday for a "Fingr Food" meet and greet after a meeting at our church this Friday night. I've been very nervous about using the banty eggs for this since they are fairly fresh, but I do have a steamer so think I will try it. Wondering if I should try to steam all 18 at once, steam in batches, and how long should I steam them? Oh, if I chicken out on the steaming, (excuse the pun, LOL), how long do I boil Banty eggs?
*I just looked at my steamer, it's large, so maybe I could steam all 18 eggs at once. Would love some input though, cause I'd hate to goof up these eggs. Thanks in advance!

I have Easter Eggers and I hear they are notorius for being hard to peel..
I used the method where you use a needle to poke a hole in the rounded part of the egg (where the air sac usually is) I did not push it all the way in..
Then I got my pot of water boiling, carefully slipped the eggs in with a spoon..Got it back up to a full boil..Turned it off and let it sit 10-15 minutes..
After that I poured off the hot water and added cool water till the eggs were no longer hot..
For the first time I was able to peel those darned eggs with ease!!

Just wanted to say that I did steam my 18 fresh banty eggs for 12 minutes, cooled them in a sink of cool water and they were a dream to peel. I will use my steamer to hard cook all my eggs from now on. Thanks for the tip!
I always start with cold water, bring the eggs to boil then turn off and let sit 10 mintues. I drain off the hot water and immerse eggs in cold water that I have thrown a couple of ice cubes into. I then add about 1-2 Tbsp. of baking soda and let sit till cool enought to handle. The shells peel right off, and if you want to be fancy, you could just remove the shell from each end and you can actually blow the egg out of the shell.
