Hello All:

First post here, although I have been a lurker for a long time and have learned much.

Name: Jackie

State: Texas

Area: South Central (San Antonio area)

Equipment: I keep the equipment to a minimum. String to hang, disposable scalpels and a large pot with thermometer for scalding.

Attended a community processing day at Eden's Cove (near Austin), plus have done several of my own birds at home.

Name: Mikki
State: California
Area: Sacramento

I have a scalder large enough for turkeys, knives and my hands.

I am willing to have a person come learn at my next slaughter, where I have a complete set-up (minus an automatic plucker). I don't have a huge amount of experience, but I will share what I have learned so far.
