That is a gorgeous egg! I lost my beautiful Glyness (my avatar pic) and only have one other easter egger left (Koraline who has stopped laying for the season) so I really miss those pretty eggs. And Silver is such a beautiful girl! I love how excited they are about laying when they first begin to lay.Today, at 29 weeks and 2 days old... Silver (Olive Egger) laid her first egg!
She spent 3 hours scampering around in and out of the coop, in and out of nest boxes, all the while squawking like she could hardly contain herself.
She finally chose a nest box and laid a beautiful GREEN EGG! (I was worried she was gonna lay brown)
I make baked frittata (crustless quiche) using slightly precooked veg and whatever bits and bobs I have leftover in the fridge and cheese. It goes great with toasted seedy type bread. Oh and if you like spicy flavors, you might also look at shakshuka, it's eggs poached in a tomato and pepper stew. I'm drooling just thinking about it.Thank you so much!!!
