I bet you're right! We like ragù (bolognese meat sauce) and chili. It looks and smells like red meat. Pretty great asset for backyard and urban farms especially. If you try sausage, I'd love to hear how it goes.Looks like 7 to 8 weeks it is. Between now and then I will have to figure out how to cook a whole duck.. My wife told that to me so it must be true. I had not considered grinding it. I bet it would make a glorious sausage... Mmmmmm
