Caring for them isn't overly difficult. Obviously you'll need at least a pen per stag/cock. As long as you can put together a few 4x4 or 4x5 pens you'll be fine.
I chewed on it a bit today. Only an idiot would walk away from an opportunity like this.

Building some pens would not be an issue and I have room in the new sheep pasture.

The main issue I'm going to have is if they get out, they could fly over the pasture fence and go after the free range cocks. Hopefully, the only way they'ere gonna get out is when I'm messing with their pen and could get over and catch them before too much happens.

Also dubbing. I'll look around for someone who does it.

do it! If you can handle 1000s of poultry for business, I am sure you could handle a trio or two of gamefowl pretty easily.

Its easy to catch them when they are fighting other roosters. they follow food pretty well too, especially if they are used to being in their pen and you throw food back in there.
 
Yeah they could (get out) but it seems like you know what you're getting into so I personally don't think it'll be an issue. On the rare chance it does, oh well it did. If he's not in sight he's not gonna go tracking him by scent lol
