The Sausage is finished and in the freezer! I saved a couple of patties to fry for lunch.

I have a chefs choice grinder for the kitchenaid. I ground the pork with the coarse plate first and then kneaded in the spices and water

I rested the sausage in the freezer while I shaped the bread and then made the patties

The parchment paper is folded over and a second layer added

Then into the zip lock bag for freezing

I take out the patties as needed for breakfast and recipes that call for sausage.

This sausage is a very good pizza topping!
