Sorry to hear about the water pipes. I bet that doesn't happen often in FL.Still under the weather but still taking pix.. just not doing jumping jacks just yet..
All day yesterday a seared chuck roast stewed w/veggies in the ole crock le pot. Home smelled good!

Center Cut Berkshire Chops W/Mac-chez & green beans..

First I browned Panko in a skillet. Then mixed with Parm cheese afterwards and egg washed the Berk Chops. Pressed the wet meat into the pre fried breading. Baked in oven for about 20 mins.
Yum..
Tomorrow:
Slow cooking some Ribs from suckling pig. Real young and at only 75# when processed. Full Berkshire bloodline. Younger, the more tender.
Homemade rub. Will absorb the rub overnight & I will cook these baby's for hours on low heat Friday.

SPICE RUB
- ½ cup brown sugar
- 1 teaspoon onion powder
- 2 teaspoons chili powder
- 2 teaspoon paprika, sweet or smoked
- ½ teaspoon cayenne pepper, or to taste (optional)
- 1 teaspoon garlic powder
I haven't been cooking too much (or anything worth sharing) and haven't gotten any notifications.
This is not a fabulous meal not presentation, but thought I would share. It is lemon pepper chicken with sweet potatoes in the instant pot.

We left water running this time! Well water is a consistent 72 degrees all year long. Keeping the water slightly running, keeps the pipes warm. But where it drips outside their are ice puddles. But no broken pipes this time. All the animals water dishes are solid frozen. YES.. this is Florida. I thought anyway. Tonight they say it will be warmer.. 31°..![]()
