I make mashed potatoes different and I leave the skins because I like the texture it makes. Maybe I'll make some tonight too.

Husband's company has a company party tonight at a bowling alley. There's nothing I can eat there so I have to eat ahead of time. They did say they'd get me margaritas with patron :D

Tacos tonight. I found Jennie O taco seasoned turkey at the store, Igor likes it and it's kid approved too. We add butter or milk to nonfat refried beans for creaminess. I like adding lime juice as well.

I baked these after assembling with meat, beans and cheese, then topped with salsa, guacamole, coleslaw mix and sour cream. Made the serving process quick and easy!
They look delicious!

What a feast! :drool I particularly love the Caprese Salad. That's the way I like to make it too, with the cherry tomatoes. The fruit plate was beautiful, and I can almost taste the roast beef! Looks like Italian beef. :drool
 
I'm making mashed potatoes... You guys have done it :gigI add oat milk and vegan butter to them. I'll probably add roasted garlic too :drool using the pressure cooker because it's amazing at mashed potatoes!

I need to eat up before the holiday party tonight. I'll have some forbidden rice with it and cauliflower. Sounds like a nice meal to me.
 
Tater skins are what has a lot of the nutritional stuff. I used to not eat them until I went plant based and I realized it's the best part of the potato.

I've always liked the skins but my mom never left them on when she made them mashed. I do though, I think they taste pretty good in there. Igor approves but the kids not so much.
