I forget what restaurant cooks their mashed potatoes like that with the skins in it, but they are so good. It's definitely a chain restaurant maybe it's longhorn steakhouse. It's where I learned to do it like that. Husband said he liked the skins so I made them like that since that day.I've always liked the skins but my mom never left them on when she made them mashed. I do though, I think they taste pretty good in there. Igor approves but the kids not so much.
My mom doesn't do skins either.
