I've always liked the skins but my mom never left them on when she made them mashed. I do though, I think they taste pretty good in there. Igor approves but the kids not so much.
I forget what restaurant cooks their mashed potatoes like that with the skins in it, but they are so good. It's definitely a chain restaurant maybe it's longhorn steakhouse. It's where I learned to do it like that. Husband said he liked the skins so I made them like that since that day.

My mom doesn't do skins either.

I leave the skins on if they are red potatoes, but not if they are white. I also like smashed potatoes, made with new potatoes, herbs, garlic and olive oil, cooked stove top or in oven, and then just smashed, not mashed. Yum.

You shop @ walmart right? Ours has these little yellow potatoes that are so good! They're baby potatoes and they come out nice and creamy before you even add anything to them. I buy them in the net bag but the ones that come in a steam bag that you can microwave are great too. The steamable ones you can also get in the red potatoes. They've been a life saver when I'm pressed for time to get dinner made. Nice quick lunch too, 6 to 8 minutes and they're done.

I'm using a hand masher because I like some chunks. I use skins on all potatoes. Russet potatoes scrubbed and cut with skins is amazing. I have garlic and herbs so I think I'll use that. Instead of butteri might do coconut oil. I might not even have to add milk according to this instant pot recipe... We will see

I have bought the steamer bags and then taken them out to cook like the smashed potatoes I just described. :th What was I thinking? Potatoes in 6-8 minutes? Now I need to buy them and do it right! :D

I'm going to cut up the potatoes in a sec. I have to do farm chores first and go say hi to HeiHei and squatch. FINALLY I'm not getting attacked or stalked by a 10 lb chicken, so glad we got rid of Sid. HeiHei loves me a lot, first rooster I've ever had that will walk up to me and want to be pet!
