I have fallen so behind on the Yum thread! I forgot how busy hatch season keeps me. And now the messy ducks. Easter we had house guests + clean up.. So I have lapsed on the yummie time. I have been breifly lurking though. Thanks for hanging out and waiting for me.. I'm back! :woot

yesterday I started a cure on 3 hams and 2 slabs of bacon. next week will be a major smoking event. We are gifting 2 of the ham and freezing the 3rd.. bacon all mine!!!!!! STAY AWAY!

I WILL DEFEND THEM! The barn refer is full of meat curing and my eggs are in record numbers right now. It is a tight squeeze.

I made pork chops, rosemary potatoes and green beans. Totally forgot to get pictures. Blame it on the incubator. I have pips!
I totally relate. I'm running multiple incubators and answering a phone that won't stop ringing. I haven't had time to breathe.

My Daughter raised pigs and chickens as pets for 4-H and FFA.. Now she can't conceive the thought of raising something and eating it. Post Traumatic Stress.
There are a lot of people in this world who prefer to go to the supermarket and buy something that your are actually blind to the upbringing of the product.
Most chickens in supermarkets had a crappy life. Born in production and lived in cramped quarters. Our birds got to live in the sunshine, breathe fresh air and lived the good life before the ran out of time. But the time they had, was high quality of life. And I thank them for their sacrifice.
Same with our pork. They had quality of life. Were taken care of and never abused. Respected.

I saw on a cooking show a while ago, that if Brussel sprouts are cut in half prior to cooking then there is less likelihood of aftereffects.

(I haven't tried it myself because I'm not a fan of them anyway.)

Wow, that one guy wanted 30 dozen eggs? That sale is worth running for the gate!
Yesterday was an all time record for us.. I collected 189 eggs! OMG
We have been selling them to that guy and he slaps his label on the cartons and sells them to little markets around Hawthorne, Newberry, Middleburg.
He comes once a week and buys the balance my regulars don't buy. I have taken my ads off of craigslist for eggs. With 10 loyal regulars and the distributor guy, I don't need to solicit new customers. Now that the frige is full of curing ham, I'm starting to have storage issues.
Very cool, I'll see how they come out on my printer (it's kind of new and I haven't used it much). Thanks Connie!

I cooked up these potato dumplings. They are store purchased, and frozen. I make my own , but just not this time. Mine taste slightly better than these, (to me). I use higher percentage of potatoes. 50%+. These seem to be less potato, and more flour percentage. Still taste good. I usually eat these with some meat stew over them. Had no stew, so just put some red sauce, and Parmesan.

Got a neat egg slicing gadget a couple weeks ago. Used it for the eggs in our potato salad last night.
Pretty slick! I like it

PIZZA DOUGH
"This is a great recipe when you don't want to wait for the dough to rise. You just mix it and allow it to rest for 5 minutes and then it's ready to go!! It yields a soft, chewy crust. For a real treat, I recommend you use bread flour and bake it on a pizza stone, but all-purpose flour works well too. Enjoy!"

Ingredients
  • 1 1/2 (.25 ounce and a bit more) package active dry yeast
  • 1 1/2 teaspoon white sugar
  • 1 1/2 cup warm water (110 degrees F/45 degrees C)
  • 3 cups bread flour
  • 2 tablespoons olive oil
  • 1 1/2 teaspoon salt
Directions
1. Preheat oven to 450 degrees F (230 degrees C). In a medium bowl, dissolve yeast and sugar in warm water. Let stand until creamy, about 10 minutes.
2. Stir in flour, salt and oil. Beat until smooth. Let rest for 5 minutes.
3. Turn dough out onto a lightly floured surface and pat or roll into a round. Transfer crust to a lightly greased pizza pan or baker's peel dusted with cornmeal. Spread with desired toppings and bake in preheated oven for 15 to 20 minutes, or until golden brown. Let baked pizza cool for 5 minutes before serving.

This is perfect for a large pizza if you make two double the recipe

We made pizza last night using the new pizza dough recipe (#2664). Honestly, I couldn't tell the difference but DH said he could :rolleyes: and ate all except one slice of it.

DH's Chef coats are deep black. Jokesters would flour their hand a place them on someone's back or even worse, a middle finger hand print. Children I tell ya.
How does she make her roux
We make ours with butterblend & flour for light roux, oil and flour for dark.

I have been slightly bz, and no time to post, but here I go.
Easter dinner was very enjoyable. The complete Caveman Clan was over. Also celebrated 3 B-days at same sitting. Considered getting 4 birds with one stone. The B-days were not on that day, but since close dates, we just mainlined it. :gig:lau.
DW goes overboard with making Great Food, and the variety is like a
"All You Can EAT Buffet" There were items I had no room in tummy for once I started eating. Let me see If can list what I remember.
2 Turkeys baked. 1 LARGE HAM. Potatoes, gravy. Brussel Sprouts. Zucchini boats. Stuffed Mushroom heads. String Beans. Sweet potatoes. Beet soup. Mini mushroom dumplings. Boiled eggs for soup and else. Smoked sausage, (non garlic for pleasant eating) Kale mix salad. Rolls and butter. Potato,fruit,egg,salad. Fruit platter with watermelon, grapes, strawberries , blueberries. Whole cranberries in sauce. Fresh veggies (cauliflower, carrots, celery, broccoli, etc) with Spinach/Artichoke/Parmesan dip. Assorted chips with salsa.
Sweet side,,,,,,, 3 cakes, One cheesecake variety collection, One Ice-cream cake. One Yellow cake frosted with Home frosting in shape of Large Cup Cake. I may be forgetting some other things now.:idunno
Family members brought enough House Warming Wine to take a small bath in. :gig
