I scooped them with my cookie scoop so they are bite size layed them out like cookies but did not flatten on parchment baked like 40 minutes

You do not brown them first and then bake them?
There must be a different in the time in the oven and or temperature
I browned them and then simmered them in the sauce for 30 minutes. That is what Joe said to do on Master Chef
I’m considering a countertop model. I wish I had a big freestanding one, but that’s another story.I don't brown mine ahead of baking either. I leave them in the oven until they are completely baked through. Then when I use them in pasta dishes, pizza, sandwiches, etc. they get heated up.
Without a dishwasher for the past 3+ years, I don't dirty any more pans & dishes than I absolutely have to!

I use cast iron and have to clean and then season it. The DW cannot lift the cast iron anymore and as I get older, I will likely not be able to use it then either.I don't brown mine ahead of baking either. Thanks!I use my dishwasher every day usually. 3 dogs is 6 bowls and that's the top rack. Bottom rack is plates, glasses and coffee cups plus miscellaneous. I scrape dinner dishes rather than rinse. Pots and pans done by hand but those are usually every other day at most.
@ronott1 smaller pieces of cast iron are available...I still have a big skillet but I rarely use it these days.

I have a big and medium one. I might have a smaller one that I need to look for. It is a good size for making a two person serving of fried potatoes
