Dinner, dessert and future meals. Cornbread casserole, broccoli slaw, bbq'd flatiron steak and shrimp for dinner. Also bbq'd some chicken thighs for Thai coconut curry chicken later in the week. Dessert is an apple crumble with fresh whipped cream.

My daughter took some dessert with her to work tonight, my son will be stopping by for some cornbread tomorrow.

1 Stick of butter, softened
1 c sour cream, room temp
1 can cream style corn
1 can whole kernel corn, drained
1 box jiffy corn muffin mix

I add a can of Rotel tomatoes and chili's drained, or chopped jalapenos, or sometimes sun dried tomatoes or roasted red peppers or cooked bacon. Whatever sounds good.

Bake 350* about an hour.

I'm going to make that. Sounds yummy.
