You can also make it with chicken, but cook the chicken first. I've also made it with portabello mushrooms for some vegetarian friends. They loved it. It is such a delicious base, it's worth experimenting with different variations.

Are you allergic to mushrooms? I'm just saying there are so many options. You could try any kind of meat, fowl or fish, and alternatively you can make it vegetarian by adding a chunky vegetable. I think broccoli and cauliflower would work, although I haven't tried it. The etouffee base is just that, a flavorful base, but it's like a sauce. It needs something in it to chew.
