I remembered to take the picture before it went into the oven but as soon as it came out it disappeared before I remembered to take a picture. This is my attempt to make Eggplant Parmesan. it turned out great. I used my garden Eggplant but they were skimpy so I bought a big one at the store and added it.

Cooking several whole chickens today in the instant pot because I’m making dog food, bbq chicken, and other chicken things to freeze. It’ll make my life easier!

We’re having leftover squash fritters, made them with yellow squash this time and added celery salt instead of regular. Meat is a tri tip and we’re having asparagus with.

I knew my new grill was arriving today, so I put wings in the refrigerator last night to defrost. I got the grill together and heated up, went to put the chicken on (I still hadn’t looked at it), and discovered it was a breast.
I glazed it with honey and butter at the end.

Since I wasn’t planning sides, I picked minute rice and corn because it was fast.

After nearly 7 weeks of living off what I have I finally broke down & ordered from Instacart. I was like a kid at Christmas & ended up with so many choices I was completely overwhelmed & settled on a salami, pepperoni & provolone sandwich with a side of butternut squash. I'm cooking tomorrow!
