I would like to be able to enjoy jams again one day, but it will only be no-sugar types. ALong with sugar free Smuckers peanut butter!! I like making my own because I can control the sugar content. Tossed old leftovers to the chickens today-- not a drop left!!

I agree with that entirely. After all the dosage for OTC's are the same for someone 4' 11" andn 110 lbs and someone 6' 2" and 275 lbs. something we rarely take into consideration. That and the fact that one person may be allergic to one thing while another is not.

We all must take some control over our health.

DW has a woman who eats my jam with some peanut butter, though I doubt it's a lot at one time. She knows what she can handle.

I would like to get into canning and jarring.  Can anyone tell me what tools I need to get to do so?


It depends on what you want to start canning. High acid foods, or foods with added acid (think tomatoes, salsa, most jams and preserves) only need a water bath canner. Low-acid foods like most veggies need a pressure canner. Pressure canners are sometimes a little spendy (mine was $60 at walmart) andmost people like to get a feel for the process with water bath canning.

Regardless, you need a canner of some sort, a jar lifter, a plastic knife or headspace gauge to remove air bubbles, a recipe, and the right sized jars, lids, and bands to accommodate your recipe.

I also recommend a book like The Ball Blue Book or Ashley English's canning book that will explain the process well. I reference both these books frequently while canning.

I also did A LOT of reading before I started, because that's just the kind of person I am. But once you go through the process a few times it's really easy and fun! Good luck!

Just how big is Conroe, TX ? DW and hers just moved to Conroe.

I don't think they're in an area where they can have chickens. You do have chickens right?

It's not tiny; no mall, one terrible movie theater, and lots of National forest nearby. The Montgomery County Fairgrounds are here (yeah!)
The west side of town is SUPER high-brow, with lots of multi-million dollar homes. The East side is way more "country". I don't know the ordinances about keeping chickens inside city limits, but we're outside them, so we can pretty much do what we want :) We live on an acre, and all our neighbors have chickens, cows, horses, etc.

I hope your DW enjoys it here! We love it; very laid back.

Sorry that should be DD, not DW. She and hers moved down for her teaching job. She had tried to get farm raised eggs when they lived in the Woodlands. I found someone who said they would bring them some but they never did. My GS loved my eggs and she wanted to feed him farm/pastured chicken eggs.

QUICK, information.

This is the second box of Ball Dissolvable Labels and have them not be good. The label comes off without the glue. Further inspection of the box says "best used within 12 months of purchase". What I don't know is how long they've been sitting on the shelf since they are NOT dated.

I purchased these like the others at TSC and will return them. I expect they will refund my money but how can we avoid this from happening again if there is no date?

Just thought you should know so you don't make the same mistake twice like I did.
