Took yesterday afternoon off from work & made it productive! Canned 5 quarts & 5 pints of dill pickles; blanched & vac-packed more snap beans for the freezer - have 18 quarts of those now - 1 quart of chopped bell peppers, & 5 quarts of yellow squash - I just slice up & vac-pack & freeze the squash-no blanching - it'll last 6 months that way & not be soft.
That is good to know about the squash. It is the one thing I have a difficult time freezing and actually eating, and I love summer squash. The blanching washed out the subtle flavor and you get mush stuff that everyone pushes around and try to hide it in the plate pattern.

Lehman's also has those reusable lids. I haven't tried them yet, but I want to.
A few weeks ago I made some pineapple Jam (the recipe is posted somewhere on this thread) anyway,I finally tried it yesterday.....let me tell you that is most likely the best jam I have had..... totally worth the high blood sugar reading !!! LOL...
I have only canned once and it was several years ago. We had some jalepeno pepper plants given to us and they took off like gangbusters. My crispers in the bottom of my refrigerator was full. My mom and dad came down and helped me. We made four jars of sliced and four jars of whole. It was sooo much fun! We took precautions with gloves and were very careful of where all the seeds were going!
This year, if my green beans make like I think they might, I want to can dilly green beans and regular too. Also... Maybe some tomatoes (sauce-salsa?) and maybe a jar or two of peppers.
I would really like to try my hand at jelly too~ I think it would be wonderful for Christmas presents!
