What are you canning now?

Two jars of chopped green chilies ... thought it would be a good thing to grow and can our own but after all that freaking work for that little return I don't think I'll be doing that again!!

Also made cranberry apple juice today. We were just going to make apple juice but then I stumbled across the recipe for cranberry juice and I thought I could mix the two to eliminate using sugar so much to sweeten the cranberries. At first my daughter still wanted apple juice only so I was just going to make a couple of jars of the cranberry blend but after she tasted the blend, she decided she wanted us to make all of it as a blend so we ended up with 12 quarts of cranberry apple juice blend. It is so yummy. All from free apples and cranberries that I got for 49 cents a bag and had in the freezer. I spent more for the canning jars than for the ingredients that went in it. Whoo hoo!!
 
I have AN ABUNDANCE Of apples (and can get more FREE if I want them)

besides the basics;

applesauce
cinnamon apple slices/rings
apple pie filling
apple butter


what can I do w/them??? help!?!?!?!?


Well, as I said, we did juice. We also always make a dried apple snack that is heaven. You slice up the apples like you would for drying, you can peel them or not but we always peel them for this, then after doing the lemon juice/water soak thing, put them in a mix of white sugar, brown sugar, and cinnamon then lay them out and dry in the dehydrator. They are addictive.
 
Does any one know of a yellow wild apple, that might have come from Denmark or Sweden with their ancestors to the USA?

Mom was thinking back to her childhood and the apples that they made apple butter from back on the farm.

Possibly the Gravenstein? It's from Denmark and is yellow although there is a red sport. Say's they're more common on the west coast.

Just finished 7 pints and 5 1/2 pints (for gifts) of Hot Pepper Butter. Super easy recipe! I had an abundance of Hungarian Was peppers this year. That is what I used. They were hotter than normal so this butter should give a kick to sandwiches all winter. If anyone is interested in the recipe I wil post it.

I've never heard of ot Pepper Butter. What's the recipe? I'm always looking for a hot spread for sandwiches & meats.
