What to do with alot of CABBAGE ?

I just made spare ribs and saurkraut today! I used home canned saurkraut. My husband is Polish, and when we first dated his mom made it. I thought it smelled horrible, looked even worse! Then I tried it , YUMMY! Just cut up pork ribs and put in a pot with sauerkraut and simmer for a few hours, or in the crock pot. I always have to make mashed potatoes with it too for on the side. No other seasoning is needed, except for salt and pepper when its done. Gotta try it!!!

Ok, another question. Does homemade sauerkraut taste the same as the kind in the cans from the grocery store? How long does it take to make homemade kraut? Again , can you freeze raw cabbage? Any other ideas out there?

There a few ways of doing it.

1) Cut into wedges, butter (or not) and place on grill...

2) core the cabbage (not all the way through the top though), cut the top slightly so it can sit flat on the grill. Place butter, onions (and I've heard an ice cube...I'm am sure it is for steaming, but never tried it personally) into the hole where the core was and grill.

3) wedge the cabbage, cut out the core. Place onions and bell peppers on top of the cabbage (outside of cabbage on grill).

I've done the basic wedge...the others I have heard about and sound tasty to me!!

NO!! I don't like store sauerkraut but I enjoy home made...

ETA:I have frozen it...it was ok in soup and boiled.

My sister blanches her for exactly three min. from the time it hits the water, chill it and freeze. It is wonderful for cooked cabbage, soup, sausage, whatever in the cold winter time!! I make stuffed cabbage too, out of the cabbage leaves on the outer edges, that are sort of loose. Hamburger (I use ground turkey, beef is hard on my diabetic husband's kidneys) rice, spaghetti sauce, cheese if you must . . .cover and bake . . .bake a cake or something else at the same time if your oven is big enough . . .yum!

No, thank god! It's much nicer homemade, not so mushy, has a more pleasant, mild taste. You can put apple slices and brown sugar and spices in, make sweet-n-sauerkraut. Some people add caraway seeds, too, although they sorta get in your teeth. I've also heard of adding cranberries, carrots, etc. sort of like a Waldorf salad sauerkraut.

How long does it take to make homemade kraut?

Oh, I guess a week or so, but it won't be very sour. You can leave it in the crock for several months AFAIK.

One of our favorite cabbage dishes is fried :)
I chop bacon up into bite sized pieces and fry in the skillet, add cabbage that's been chopped into bite sized pieces, fresh mushrooms sliced up, garlic salt or minced garlic, put a lid on the skillet and fry on medium-low heat until cabbage is translucent looking. Stir frequently. It's soooooooooo yummy!
