What to do with alot of CABBAGE ?

I to fix my cabbage like this. Like you I add the onions and peppers and something else you should try is get a package of the dry hidden valley Ranch Salad Dressing and Seasoning mix, and sprinkle about half of the package in the mixture..

Make sure it is the Salad Dressing and not the Dip though, the dip is just nasty tasting in the cabbage. LOL
 
When I was a little girl, a treat from a neighbor lady was a cabbage leaf fresh from the garden.

All these recipes sound great and got me wanting to make sauerkraut - how come noone posted their recipe?

A friend whose daughter is a vegetarian gave me this one:

Saute shredded cabbage in some oil until translucent.
Then add cottage cheese and cooked egg noodles, salt & pepper to taste.
Simple and YUM!

I'm dying to try this recipe from Ms. Paula Deen for BBQ Cabbage...

Try it, I just be you'll like it!

Ingredients:

5 slices bacon, cut into 1/4-inch slices
1 cup chopped onion
1 medium green cabbage
1/4 cup barbecue sauce
1 tablespoon butter
1 teaspoon House Seasoning, recipe follows below

Directions:

Parboil cabbage for 20 to 30 minutes.

Add bacon and onion to skillet and cook until just beginning to brown but remains soft; about 3 to 5 minutes. Drain bacon and onion in a strainer over a bowl and reserve the drippings.

Cut the core out of the cabbage about 3-inches down towards the center and in a circle about 3-inches in diameter. Sprinkle and rub the House Seasoning onto cabbage. With a pastry brush, brush the reserved bacon drippings all over cabbage. Set aside.

Add barbecue sauce to the bowl with the bacon and onions. Mix together. Fill cabbage with this mixture where the core has been removed.

Crumble a piece of aluminum foil into a ring about 3-inches in diameter. Place ring on top of grill and set cabbage on top.

Allow to cook for 20 to 25 minutes. Quarter cabbage with a knife when ready to serve.

House Seasoning:
1 cup salt
1/4 cup black pepper
1/4 cup garlic powder

Mix ingredients together and store in an airtight container for up to 6 months.

Some one already said something similar to this but what the hey...

one head cabbage chopped rough
five strips bacon
garlic salt
black pepper
apple cider vinegar

Cut bacon into one inch pieces. Fry till almost crunchy. Remove from pan. add cabbage and fry with salt and pepper to taste. When almost done add the bacon back in and put lid on the pan to steam some. When ready to serve add a splash of vinegar ( I love the vinegar so I am quite generous with it, the bacon fat and vinegar make a dressing that is so good)
 
Last year, a nearly-retired woman I work with told me it can be canned like any other veggie in a pressure canner.. I haven't tried it, but might give it a shot this year. I had a lot of cabbage go to the chickens last year!

Katy's cabbage chicken salad:

1 head of cabbage - raw, sliced into strips (sometimes I use red, sometimes green, sometimes both)
1/2 as much baby carrotts raw, sliced into matchsticks
1 or 2 bunches of green onions - raw, sliced at an angle
one bunch of ciliantro - raw chopped
1 tablespoon red pepper flakes
1 jar of peanut sauce - Jade Schezuan if you can find it (Williams and Sonoma carries it)

toss all of the above and chill

seperately:
simmer two half chiken breasts untill just cooked. chop and toss with small amount of soy sauce (enough to coat) chill in soy seperately from vegis. just before serving mix together.

Best served with cabage leaf wraps (red)

I also use cabbage as a noodle replacement (me and wheat don't get along

). I slice it in to thin ribbons, cook it in butter, and then I top it with chicken and alfredo sauce.​
