It depends, they don't stop from one day to another, they usually slow down their egg production year by year, then they stop many years later (I know about 8-10 year old chickens which still layed few eggs per year)

I agree, you just have to make sure to have them separated for some weeks before collecting the eggs for incubation (females can store the sperm, so they are able to produce fertile eggs for weeks even there are no drakes around anymore)
