How are you sexing these, by head spots or by down color? I only ask because looking at the cross you used to make them Im not sure I see how you would sex them either way.
EEs are mutts and could be a mix of any 2 or more breeds as long as one parent carries the colored egg gene. There would be know way to get this variety of chicken approved as a recognized breed. I have 6 EEs and they were all created using very different breeds.

I hear ya with no eggs and not wanting to buy store eggs. Yesterday I had 14 eggs(saved up over about a 5day span) and I have no idea what happened but we had a bad egg day.

They both look like pullets to me. The first one has the classic pattern for girls EEs. The second one looks like a girl though her coloring is not typical for a girl. She looks as though she has some darker red coming in on her shoulders(which is typical for a boy)...
