Hard boiled eggs

Here is how I do it. I put my eggs into cold water in pot on stove. Turn on heat. Gas flame in my case. When water starts to boil, continue the boiling for 5 or 6 minutes. Turn of stove, but leave eggs to cool in water. You could boil them slightly longer like 8 or 9 minutes, and then cool the eggs by pouring cold water into pot.
Can be peeled at that time and not too hot to handle.
If you would cook eggs for 3 minutes after boil starts, and then cool them,,, you would end up with soft boiled eggs. :drool:drool:drool My Fav.
The white is cooked, and the yolk is somewhat still liquid.
There are many peeps that have their own tricks to make peeling the eggs easier. Some I read put the eggs into ice water after cooking. I have not tried any of those tricks, since peeling was never an issue for me.
Fresh eggs tend not to peel easily. Eggs that are 1 or 2 week old peel just fine.
I did mention in the beginning, to put eggs into cold water, and start cooking. This prevents the egg shells from breaking during cooking. Putting cold eggs into boiling water almost always resulted in cracked egg shells. That is why I never do it that way.

good instructions! Ive always added a pinch of salt too. Definitly boil your older eggs, eggs under a week are sooo hard to peel. Putting them in cold water right after they are done does seem to help alot. Great now i want a midnight snack of boiled eggs! :)
Now my quail eggs peel very super easy when fresh. And only take 5 mins to hardboil!

Many peeps soak the quail eggs in some water and vinegar,after cooking. After a certain amount of time, the skins peel off like rubber. They are usually making pickled eggs with those.
I have never tried them.

Ya i read that just today on another thread, I'll have to try it sometime !
But mine just squeeze out of the shells practically. They are so good in salads and you only have to slice in half! Blast i really am going to have to find a snack or go to bed now lol

I read that you put them in the cold water if you are peeling them right away. Is this true? Or not necessarily?
I want to peel one a day for 12 days.

I got this awesome gadget for Christmas. It's called Dash Rapid Egg Cooker, I've been able to cook same day eggs in it. I do cool the eggs off before peeling them. They sell other brands that do the same thing, mine holds 6, but I believe the sell ones that hold 12 as well. It basically steams the eggs. You poke a hole in each shell, but they end up peeling perfectly. It's about the width of a dollar bill, but fits my extra large/ jumbo eggs.

Before I got this I waited until my eggs were 2 weeks old and boiled with baking soda and salt in the water, but even then they didn't always peel well.
 
If you want them to be easy to peel, especially if they are fresh, steam them. They will peel like a dream. Steam for around 12-15min depending on how hot your stove is and how big the eggs are. Rinse them in cold water then pop them in the fridge. They should peel easily. The cold water helps the eggs shrink back rapidly away from the shell so they stick even less.

Incidentally, it's 5-6 minutes for a soft boiled egg. I also think soft boiled is the ultimate egg. But they don't keep for 12 days.
