How many chickens can roost in an 8x5 coop?

It will hold them but you will probably see aggression. My bantam coop is 8x10 and can comfortably house about 15 bantams with 20 bantams starting to be tight. Standard breeds need even more room and will be more aggressive when crowded. I would plan on about 12 chickens in your plans. Location can affect things too.

My coop/ covered run combination is about 14' x 22', split in five sections that can be closed off or opened to each other. So slightly over 300 sq. ft. total. I overwinter about 45 birds, and almost half are bantams, and there's enough room for them. Right now I have almost 70, with the babies, but by fall that number will be down to my winter flock.
Crowding is not a good thing!

I'm currently building a new coop and I'm wondering how big it should be built. I plan on having an 8x5 sleep area with a 30ft run and I want to know will it hold at least 20 chickens minimum?
Short answer, No.
Run is 30' by ???...or is it 30sqft?
Much depends on your goals and climate.

Here's a good article to read about space:

Where in this world are you located?
Climate is almost always a factor.

It's easy to do, then it's always there!

It would be like 30' or 40', possibly 50'x8'ft. I live in the piedmont area of NC.
