Instead of making chicken pot pie a couple years ago, I made chicken pot pie soup. It is a huge hit.
Jalapeño Popper Soup is another favorite. Gluten free and low carb, but high fat.
Dinner tonight, home made chicken pot pie, cheater style, cream of chicken soup, frozen veggies and Pillsbury grands flakey biscuits. Do not follow the directions for the soup, add about 3 to 4 tbs of milk per can used. Stir well, mix in vegetables, then add precooked chicken and stir. If its too thick, use some liquid from the chicken to thin it to your desired consistency. Add biscuits to top, covering however much you want. Heat oven to temp required for biscuits, then cook for 20 mins, or until biscuits are desired color on top.
