I will check sprouts thanks. I will ask them if I cannot find it too. If it has enough dietary fiber it slows the carbs so definitely worth a look.
According to google, it has 7 grams of fiber per serving :D
I will warn you though (cause this confuses my DH everytime he cooks it) farro never gets as tender as say rice. So one must like toothsome grains to really enjoy it :) But it is less "seedy" than quinoa and I think it is very tasty.
 
Not trying to fully remove grain. Just finding much better options like the tortillas.
Potatoes.....that is a rough one.....most options make potatoes worse not better.
I have to remove them because just half of a small one had such a negative impact.

The tomato one looks yummy. I like cheese so will try both of course.

One other thought, and then I will quit yammering about food (ie my second favorite topic after chickens).

The book "Vegetables Every Day" by Jack Bishop is great, especially once the garden starts producing. I said I am not creative and I mean it. This book has recipes organized by vegetable type. Lots of ideas for salads, sides, soups, etc. Much recommend, although maybe see if the library has it since it is kinda expensive.
