Seriously I am surprised it (THE ham) arrived so fast.

I am uncultured! I am used to plain ole cheap ham!
Although ......... Someday......... I just might get all classy ......... For a few minutes.
 
Smuv darling......If I come visit you will you make me a Jamon and swiss on pumpernickel? Maybe a big dill pickle on the side?

Sammy looks like you already found one of my posts. Flavor is a function of feed, husbandry and age. The older they are the more flavor. Tenderness is a function of age, the older they are the tougher they are. Some breeds develop faster so you get more meat earlier.

If I were processing a 5 year old bird, I'd likely brine and pressure cook or grind it. Two year old birds make a phenomenal stock and amazing chicken and dumplings—but I simmer them for up to four hours to get the meat tender.

Yes sir I did. I cooked the two cockerels last night and the one that was close to 1 was a bit chewy for my taste. I decided to slow cook them next time. I thought that would still be considered young and I was wondering if meat bird feed would affect the tenderness. I did learn how many things affect the texture of a chicken who knew

So folks...... Sad but true story...... My newish neighbor got birds last spring. The coop is 4x8 raised so not much headroom. They are using a heat lamp. How do I know?
We sleep with our window cracked a few inches in winter. Last night at midnight someone laid an egg or whatever. Super loud enough to wake hubby. Thinking it was my birds he went to check on mine. Said he got out the back door before it was clear it was the neighbors. Of course like a good and caring man he peeked through the crack in the fence to be sure it wasn't an attack going on. He said that the red light was definitely on.

Poor birdies. No sleep for them.
 
I need to go let my well rested birds out.
Gonna do it all classy like in a fur coat and fancy spiked heel shoes.

I already picked the poo in the kennel all super low class like. Slippers, socks and a hoodie.........probably should a wore pants.
