I have used V-8 juice before. Used grated parm cheese for a thickener.. mushrooms sound really good. I am out at the moment. Excellent idea though.
Hmmm...I've never tried that. I'm not a super fan to drink it, I find the celery overpowering...but I bet it would be extra yummy in a chili. I'm going to try that!!!

Forgot to say that the guys will add cheese on their chili after it's served. I'm thinking cheese might be too much for me, but the guys love it. I add rice to the chili to thicken it here for a one pot meal. My gran used to do them separately...but that's just more washing to do in my thoughts. :D
