Not Flighty and Small is a tough combination to find. Silkies come to mind but since I haver little experience with them I can't suggest them. I only suggest breeds I have experience with. Look for someone selling mix breeds then pick out ones you like, some of the most beautiful birds I have seen were mixes.. some were my culls because they didn't have the traits I was looking for but turned out to be great productive pets who were beautiful. Some of the best small birds were a mix of a Bantam and a Large Fowl. Perfect size birds that forage well and produce more egg per amount of feed eaten with out having the eggs so small you have to break a weeks worth of eggs to have a meal.
 
I just had an idea marketing Banties, - portion control for those of us who need it. I'm just banty size myself and struggle to eat large portions (except for ice cream). Had a very nice half chicken meal with sides at Boston Market (used to be Boston Chicken) but, found the half chicken was too much for me. Of course I loaded up on the sweet potato casserole.

I find ice cream isn't a problem because it melts fast out of the freezer and liquids are easier(I think) to digest.

I think Quail would fit for that, too.
 
I have 2 silkies. After everyone else puts themselves to roost for the night, the Silkies stay up and follow us around like puppies. They will watch TV with us until I have to put them to roost myself. And yes, they do have to have spa days once in a while. This weekend it is haircut time. It grows back so fast.
 
Bantam Cochins! Our girls and boy are so soft and cuddly. We have frizzles and normal feathered. They are my favorite because they are calm, quiet and are little floofs!

And last, but not least, Ed. I have never seen him crow and the girls don't get noisy as they don't announce when they lay.
