I think any old fat should work, it'd just change the flavor slightly. Duck fat sounds like a delicious indulgence instead of beef.
I also make Ghee for home use... Its butter that is melted down letting the milk soldis brown a little and give the butter fat a nutty taste. you strain it through a fine mesh and It will keep on the shelf at room temperature for months... You can use it to deep fry if you want, No preservatives.

Cooked in Ghee might be nice too.
