Today is day 7 and I'm 8.2 lbs down as of this morning. I'm past the sugar withdrawal period (lasted about 3 days), have more energy already and feel great!

I'm posting this to hopefully encourage anyone who is thinking about changing their diet. YOU CAN DO IT!

I was reading something on MSN yesterday about the "secrets" of people who appear to be naturally thin. There have been many studies about this, and there are ten things that they have found. I can only remember a few, but here they are...
Thin people seem to:
-not refer to "dieting", rather "healthy choices".
-not keep junk in the house.
-eat breakfast.
-eat until they are comfortable, not stuffed.
-eat simply to refuel their body, not because they are emotional or bored.
-eat approx. 6 meals a day, keeping their stomach at 1/2 to 3/4 full at all times. Have you ever noticed that you'll eat practially anything when you're starving?
-let themselves eat not so healthy things, but it's in moderation (as in, a half a bowl of ice cream, not the entire container) and they don't beat themselves up for having it.
-excercise, or fidget and move a lot.
 
OH MY GOODNESS, I just had a little taste of heaven... well, when you're watching what you eat anyway.

Okay, once in a while I NEED a chocolate desert, know what I mean? It doesn't have to be sweet, but it HAS to be chocolate. Tonight was one of those nights. So I looked online and came across a recipe where you take a no sugar added fudgesicle, microwave it in a bowl for about 12 seconds and then scrap it off the stick into the bowl. Add 1 tbs peanut butter (I used all natural) and 1 tbs light or sugar free frozen whipped cream or cool whip. Stir it together. I didn't have any cool whip or whipped cream on hand so I tried it without it and it was....

The scale has only moved down a measly 4 oz in the past few days which means I've hit that first plateau... so I will be weighing weekly from now on.


Breakfast today was a spinach, egg & cheese kind of mini quiche. I've made this twice now and have gotten better, but I'll keep modifying it until I find a recipe that is heavenly (it's not bad now, but not quite "to die for"). I'm snacking on celery sticks dipped in roasted garlic hummus right now. YUMMY!

Anyone trying to lose weight or maintain a healthy weight really ought to try the peanut butter desert recipe above. I can't wait to have it again after supper tonight!

Well, I've lost over 14 lbs. now and I am sooooo happy with this diet.... errr, way of eating. I'm headed to NYC next week with my son's high school marching band (they'll be marching in the Macy's Thanksgiving Day parade - YEAH West Johnston

) and we'll be there for 5 days so I'm a little nervous about eating right while I'm there. I want to stick with it but I HAVE to have a slice of authentic NY pizza, don't I?

Anyway, here's a dessert recipe I came up with the other night that is very good, if I do say so myself.

1 lb part skim ricotta cheese
8 oz reduced fat cream cheese
2 eggs
6 packets Truvia or other sugar substitute
splash of vanilla extract (about tsp)

Mix with hand beaters until smooth and creamy. Spoon batter into muffin pan (I used my Pampered Chef stone muffin pan) and bake at 350 degrees for 45 minutes or until lightly browned. Top with sugar free strawberry jam and whipped cream, if desired.

Next time I'm going to try putting a dollop of the strawberry jam on top of the batter BEFORE I bake them to see how that tastes.

I do a modified SB / 6 week body type of thing. I also love the Slim Fast Low Carb Chocolate and Vanilla shakes as a treat, chocolate moreso than Vanilla though. Hard to find them however....Sam's Club does carry them here, but thats about the only place I can find them. 20 g of protein and only 6 carbs - no sugars!

I mix the vanilla with berries and ice as a special "shake" treat and they are really really good. Just throw them in a blender and MMMMM!

Chocolate I just do all by itself - but never drink them out of the can, ick! Always ice cold and out of a glass - if they even get slightly warm I cant do it, they taste nasty.

ETA: When you do start allowing carbs back in - try the Mission Low Carb tortilla's (7 carbs, 11 protein) for wraps and making thin crust pizza's - I do this all the time and they are SOOO good!

Hennysmom - how do you make the pizza out of those LC tortillas? I never thought of that and I have those...their not to floppy?
 
I make my own sauce (roma's, basil, garlic, onion, and some sweet & low or whatever you sweeten with *seed the tomato btw*) and blend it in a blender - you can add a little tomato paste to thicken if you want to.

Take tortilla and spread out 2 tbs of sauce (I like it a little saucy) then top with cheese of your choice and other toppings (some veggies, pepperoni, etc)

Place directly on rack or pizza stone (no oil) - in 450 degree oven (make sure if you place it on the rack it doesnt fall thru!).

Cook about 10 mins or until the tortilla becomes nice and crispy!

Its VERY VERY good - tastes just like a very thin hand tossed pizza from pizza hut - only better!

I usually eat 1 - sometimes 2 and feel absolutely no guilt or shame whatsoever with only having 14 carbs in 2 pizza's (i usually dont put alot of veggies, I usually only have cheese and chicken) so lots of protein - when you add in the protein of the tortilla, cheese, and chicken.

PS - dont overload it with cheese and toppings or you'll break the tortilla - I learned that the hard way

I average 2 tbs of sauce, about 1/4 cup of cheese (maybe a little more if no other toppings..depends on how I feel that day), 6 pepperoni, & about 1/4 of a bell pepper is about what you can put on them before they break. Play around with them and see what you come up with.
