The em dash is the length of THREE hyphens, the en dash is the length of two.

Never ever ever use two hyphens as an em dash no matter what the misguided grammar books tell you. There's a small clarity error in the Chicago Manual of Style that has resulted in a gross misconception that two hyphens will be an appropriate stand-in for an em dash.

I like to organize the roost but then I feel like a failure if they start pecking each other.
