It was def a learning experience, but sounds like it didn't go too terribly that it's not worth doing it again. Especially if you've got more than a few birds to do. I've never processed, but it sounds like pretty labor intensive. Outsourcing seems like a good option when available.
Ugh, bad news. I bought a food vac bag system to rebag my birds and I made a discovery. I'm NOT using him again. Every bird has the lungs and kidneys left behind. Not that it is that big of a deal, but it isn't even remotely desirable. Also, he was only supposed to skin 5 birds. He skinned more than half of them. Grrrr... oh well. I'll have to see if I can find someone else. At least now i'll have more time to do research.
Rae, Cornerstone farm ventures was where I got my crates and shrink bags. I can often fit two of my cockerels in a broiler bag.

ETA: Premier 1 now sells the model that I bought and cornerston has changed?:confused:Amazon of course sells them too.
I've used Cornerstone before. I bought my knives from them. I love their folders with replacable surgical steel blades. I'm bad at sharpening.

I have a knife with replaceable blades too. I really like it.

I'm too far for you to drive but I'd happily process your birds for you and not skin them.
I would take you up on it if you were closer. I'll try to see if I can find a "custom butcher" establishment that does chickens.

On another note. I LOVE the proportions of my Dark Cornish. The one 3.5 month cockerel I sent weighs 3 lbs and is very meaty.
