Eggs are a glucose free item.
Catch 22 is your cholesterol being high.

I would reduce the number of eggs and increase salad greens (limit the dressing).
Meat is ok but pasta is a no no.

I have found eating protein rich foods slows the carbs so I don't spike as bad.

Bread...:(....yeah bread. Nature's Own butter bread is about half the carbs of most other breads.

Lots of label reading and careful choices really helps.

What was your A1C if you don't mind sharing?
I was reading eggs were linked to diabetes and 4 a wk was a limit :barnie:rant:mad::he.. I'll look for that link

I can't eat wheat or cows milk products... I have some gluten free stuff a couple times a week...it's just simple carbs and I think of it as candy

A1C was 6.. not that high ... not running to the dr, just making changes
well changing back to how I usually eat, except for a ton of eggs.

Oh, me either. Tonight we're getting down to 39, today's high was 59, after it was about 89 yesterday. None of THAT in the forecast yet, but I know it's coming. 40's overnight for the next few weeks. It's only a matter of time. I sympathize w/ you, and I think we all agree that we're glad we're not in Montana.

I get free blood work once a year from the place I retired from. So I haven't been to a Dr. But...
My blood work came back slightly high in glucose and a1c... Colesteral was high
Garden failed and I have been eating can fruit and few veggies... Lots of beef and pork too... Oh 6-12 eggs a day... duh
I know nothing about anything, but good luck! Isn't it usually the egg yolks they associate w/ high cholesterol? Maybe separate out a few yolks when you're cooking to make it a bit healthier.

Yes it is the yolks with the cholesterol and also has most of the nutrients.

I used to cook them in a pan with veggies and coconut oil... But with few garden veggies I have been having 2x as many. ..hard-boiled or scrambled in the microwave

My last A1C was above 6 even with meds.

Interesting here is that our endocrinologist is a type 1 diabetic. She said we can have as many eggs as we want....hubs cholesterol is elevated but not super high.

Since starting meds and with diet changes hubs went from an A1C of 14.3 to a 5.8 in just 3 months. He does still drink sweet tea and has a small candy almost every day. He has also increased his egg intake quite a bit.

Some changes will be very easy while others will drive you nuts.

Canned fruit....in it's own juice and limit serving size.

Dried beans are high in carbs so yeah I miss chili.
Green beans are pretty low in carbs but English peas are high and snow peas are in the middle.

Serving sizes on a lot of products are ridiculously small. :(

Oh and gluten free....that means flour replacer...those I have found are ridiculously high in carbs.
Rice is super high like pasta.
That doesn't mean we totally don't have any. It means we watch how much we eat, what we pair it with and what time of day we eat it.

I can avoid spikes if I am very active for a couple hours after eating those things and pairing with a good protein like fish or chicken.

I do get why you would be concerned. Insulin is extremely expensive. It is best to stay off that.
No insurance helps with insulin at all.
 
Oh and one MORE thing......the same item in brand A can vary greatly to brand B in how much carbs there are.

Example.....
Chocolate ice cream turkey hill is 30+ grams of carbs while Kroger is ~20 both have a serving size of 1/2 cup.

Sherbert is ~33 grams of carbs per 1/2 cup serving too.
Sugar free does not mean low carb either.
