Pickled tomatoes are not bad. I have some I bought mixed with baby dills. The particular recipe used is a bit sweet for my taste, but I imagine they'd be really nice in a more sour brine. I add them to salad and they are tasty. Pealing isn't as bad as you think either if you want to stew them or make sauce form them. Cherry tomatoes tend to be sweeter, They also tend to be full of water, so it would have to get cooked down a bit I imagine. Drying them is a cleaver idea. I bet roasting and then drying would produce a nice flavor. Not sure then you can can them like sun-dried tomatoes.
 
I picked a bunch of tomatoes just a bit ago from the garden. many of them are VERY ripe. I'll be making some more salsa for sure - I've got PLENTY of sweet and hot peppers around here too. I might try to make some sliced roasted peppers canned in spicy tomato sauce too. My aunt did this and gave my some last year. They are great on beef sandwiches or Italian sausage.
 
I am hoping to halve and dehydrate a lot of my cherry tomatoes. Never done it, hope it works. I hope to use them on my salads.
I like to have tomato powder on hand for "thickening" stews and sauces with great home-grown tomato flavor. They don't really thicken per se, but they do soak up moisture.
I dehydrated cherry tomatoes last year. I didn't do anything more than wash them and toss any that had bad spots. Then cut them in half and spread them out, skin side down. I don't remember how long they took to dry, but it did take awhile.

They're tasty. The seeds get stuck in my teeth, but I don't mind.

I did the tomato powder thing a few years ago. It ended up at the back of the cupboard, forgotten. If I do it again, I'll put it where I will see it.
 
Just canned 18 lbs of peaches, and made zucchini muffins too.

Also, (not a preserving thing, but just a zucchini side note) I have a toddler who loves almost all fresh produce, but will NOT eat cooked zucchini. I recently tried grating it (like you do for bread/muffins) and mixing it into scrambled eggs, and she ate everything on her plate.
