I use mason jars to make my pesto but do not add oil.
Oil is added as used the jar is kept in the freezer taken out as some needed.

Ingredients




2 garlic cloves, crushed
Young greens from any plant
1/4 cup parsley leaves
1 cup walnuts, these nuts can changed at will
1 cup flax
1 cup Parmigianino Reggiano cheese
Kosher salt
Pepper
2 tablespoons fresh lemon rind lime works

Do noy be worried to use mustard greens, basil or oregeno, radish tops or brussle sprout leaves.



How to Make It
Step 1

In a food processor, combine the garlic, greens, parsley leaves and the cup of walnuts; pulse until finely chopped. Stir in the 1 cup of cheese. Season with salt and pepper.

Mix completely
Store in freezer

I found 6 cases of jars at the tractor store.
I have a ridiculous number of jars and lids, but I like a buffer, and darn if the buffer is gone.


I just looked at what I need to get processed this weekend.
20 pounds of chicken breasts and 15 pounds of lean ground beef
3 pounds of stew meat
24 ears of corn
25 pounds of tomatoes

HA Saints Preserve us! :lau OMG I think I'm over-tired.
I saw an older couple buying at least 10 if not 15 cases of jars at the store near me. They took everything that was on the shelf and then they were at customer service on my way out getting more brought up the stocking inventory. I've never bought that many at once. Most I bought was 100 jars and I thought that was a lot.
 
Might be that they need the lids.
Guy yesterday bought cases of jars, simply because he had no lids.

Pulled another 13 pounds of tomatoes this morning.
There's another at least 13 out there that can stand another day on the vine, but I'll pull if it looks like the storms will be out of control tonight.

I went to 6 stores looking for jars. And last night the online, pick up at store dawned on me. So I'm off to pick up my jars and get my flu jab.

Last year I bought 14 cases from family friend . And I still look at the thrift stores for more! I just got 2 cases of boxed up Ball quarts. ! It's like chicken math!@$_-+#$@#__#@#
 
Withrlady how do you put up lean ground beef.
I brown it to almost done, and fill my jars to one inch from the top. 1/2 t canning salt per quart (half that for pint) pressure can for 75 min pint 90 min for quarts

Speaking of. One darn jar refused to seal in one batch, and two in the second. Too tired to deal with tonight. I'll just drain and toss them in vacuum bags for the freezer. They were pint jars, so no biggie.

Ya. I went to pick up my cases ordered last night and a truck had just delivered a pallet of stuff that had a few cases on there. I bought those too. 10 cases came home.
MOST of my jars are from the Mennonite thrift store. 25 cents each, can't beat that with a stick.
 
One canner load of chicken breast cubes in pints is cooling in the canner while 20 pounds of trimmed breast is cooking in the oven for shredding and canning in the next batch.

I grabbed some salsa and pizza sauce mixes to try for grins to use up all these tomatoes on the counter.

The grapes are ready to I'll be doing a Rose Jelly with them.

August, am I right?!
